Farmers have been getting equipment and storage areas ready, and although the tractors and harvesters have changed over the years, the results remain the same: big, brown and meaty potatoes.

The process may take fewer people than it once did, but some schools in potato country still recess for the harvest so farmers’ family members can lend a helping hand.
