It’s great to can and store stewed tomatoes or chili sauce, made with your home-grown tomatoes, for winter eating. But if you don’t have time right now to do all the work, there is an easy way to preserve your tomatoes: freezing them whole.

“It is possible to quickly freeze raw tomatoes without blanching them first,” said Kathy Savoie, a University of Maine Cooperative Extension educator, in the video below.

Just do this:

They’re great in soups, stews, chilis and casseroles, and you don’t need to thaw them when you add them to a recipe, as they’ll thaw as they’re cooking. Green tomatoes can be frozen, too; they’ll just be a little mushier than normal when they thaw.
