EDMUNDSTON, New Brunswick – Evangeline T. Saindon, 88, died on July 17, 2004, in St. Basile, New Brunswick. She was born Aug 29, 1915, in Fort Kent, the daughter of Victor and Modeste (Deschaine) Theriault. “Angie” spent most of her life working as a cook. She worked in lumber camps, summer camps, and in the homes of priests and Brothers of the Sacred Heart. She owned several bakeries and restaurants in Frenchville, Madawaska, and Millinocket. She authored two cookbooks and donated the proceeds of the sales to the National Multiple Sclerosis Foundation. Evangeline was predeceased by her parents; her first husband, Valere Daigle; her daughter, Patricia; and her second husband, Maurice Saindon. She is survived by two sons, Fernando Daigle and his wife, May Jo, of Lincoln, Neb., and Eldred “Al” Daigle and his wife, Vi, of Madawaska; nine grandchildren, Linda Mathis and her husband, Morgan, Father David Daigle, Steve Daigle, Susie Daigle, Gina Jandreau and her husband, Colin, Tina Roy, Stacey Daigle, Leslie Daigle-Cote and her husband, Allen, Laurie Daigle; 11 great-grandchildren, Aaron, Melissa, Jared, Sarah, Alex, Darin, Cole, Isabelle, Kelsey, Jake and Molly; one brother, Fernando Theriault of Ridgewood Estates in Madawaska; two sisters, Artheline Paradis of Bristol, Conn., and Cora Cleveland of Indianapolis, Ind. Funeral services will be held 10 a.m. Tuesday at the St. Thomas Aquinas Church. Interment will be in the Parish Cemetery.
